Ingredients Cottage cheese (paneer) - 500 grams Oil (for grilling) - 4 to 5 table spoon For The Marinade Ginger,peeled - 1 inch piece Garlic,peeled - 4 to 6 cloves Green capsicums - 2 to 3 medium Lucknowi fennel (saunf) - 2 tea spoon Green cardamoms (Elaichi) - 4 to 5 Lemon - 1/2 Gram Flour (besan) - 2 table spoon Turmeric powder (haldi) - 1 tea spoon White pepper powder - 1/2 tea spoon Chaat masala - 1 1/2 tea spoon Fresh cream - 1 cup Saffron - a few strands Butter - 1 table spoon Salt - to taste For Serving Fresh Coriander Leaves - a few strands Lemon Juice - 1 table spoon Chaat masala - 1/2 tea spoon Method Cut paneer into one and a half inch squares of half-inch thickness. Grind ginger and garlic to a paste. Cut capsicums into one and a half inch squares. Heat oil in a pan. Add besan and cook until it emits a fragrant aroma, remove from heat and add turmeric powder. Cool flour and transfer into a bowl. Add ginger-garlic paste, white pepper powder, salt, lemon juice, green cardamom powder, fennel powder, saffron and fresh cream. Whisk well to make a batter. Add paneer cubes to the batter and marinate for at least an hour. Thread paneer cubes and caspicum squares onto skewers .

इसका खट्टा-मीठा स्वाद खासा मजेदार है. खास बात यह है कि इसमे कैलोरीज भी ज्यादा नहीं होती. Master Chef Tarla Dalal Explains How to cook Khandvi (Gujarati Recipe) in an extremely easy way. Ingredients: 1 cup besan (bengal gram flour) 1 cup fresh curds (dahi) mixed with 1 1/2 cups of 2 to 3 drops of lemon juice 2 tsp ginger-green chilli paste 1/4 tsp turmeric powder (haldi) a pinch of asafoetida (hing) salt to taste 3 1/4 tsp oil 1 tsp mustard seeds ( rai / sarson) 1/4 tsp asafoetida (hing) 5 to 6 curry leaves (kadi patta) 1/2 tsp finely chopped green chillies (optional) For The Garnish: 2 tbsp freshly grated coconut 2 tbsp finely chopped coriander (dhania) Method: • Combine the besan, curds-water mixture, lemon juice, ginger-green chilli paste, turmeric powder, asafoetida and salt in a deep non-stick pan and mix well to make a smooth batter (taking care that no lump remains). • Cook on a slow flame, while stirring continuously till it becomes thick (approx. 8 to 10 minutes). • Grease a thali (approx. 10") on the reverse side using ¼ tsp of oil and spread a spoonful of the batter on a greased thali and wait for a few seconds and try to roll up. If it doesn't, then cook for a few more minutes, and check once more till done. • Divide the batter into two equal portions. While the batter is still hot, spread each portion evenly using a spatula, on the reverse greased side of 2 thalis evenly to make a thin uniform layer using a spatula (refer step 1). • When cool, cut the khandvi on each thali lengthwise (approx. 1½" in width) into equal portions (as shown in the image) and roll up each gently (refer to step 2 and 3). • For the tempering, just before serving heat the remaining 3 tsp oil in a small non-stick pan and add the mustard seeds. • When the seeds crackle, add the asafoetida, curry leaves and green chillies and sauté on a medium flame for a few seconds. • Pour the tempering over the khandvis. • Serve immediately garnished with coconut and coriander.

The crispy and crunchy okra and chilled creamy yogurt, give very good textural contrast to this raita which really needs nothing else! It is safe to say, this side dish can be a lite and delicious main course as well!! Watch the easiest way to make Bhindi Raita with master chef Sanjeev Kapoor. Ingredients Ladyfingers (bhindi) - 15 to 20 Chaat masala - 1 teaspoon (tsp) Curd (dahi) - 4 cups Black salt (Kala namak) - 1/2 tea spoon (tsp) Roasted cumin seed (jeera) powder - 1 1/2 tea spoon (tsp) Chilli Powder - 1 1/2 spoon Salt - to taste Oil - To deep-fry Method Heat sufficient oil in a kadhai. Cut ladyfingers into thin diagonal slices and deep fry in hot oil till crisp. Drain on absorbent paper. Sprinkle a pinch of chaat masala and ¼ tsp of red chilli powder. Put yogurt, salt, cumin powder, ½ tsp red chilli powder in a bowl and whisk well. Add half the fried ladyfingers and mix well. Heat 1 tsp oil in a non-stick pan. Add radhuni and when the seeds splutter, add it to the yogurt mixture. Add mint leaves and mix. Transfer into a serving bowl and add the remaining fried ladyfingers. Garnish with a few mint leaves and serve immediately.

Ingredients: 1/2 cup yellow corn (makai ke dane) kernels 1/4 cup finely chopped capsicum 1 1/2 tsp finely chopped green chillies 3 tsp rice flour (chawal ka atta) salt to taste Other Ingredients: oil for deep-frying For Serving: green chutney Method: • Blend the corn in a blender to a coarse paste, without using any water. • Transfer the mixture to a bowl and ad the capsicum, green chillies, rice flour and salt and mix well. • Divide this mixture into 7 equal portions. Shape each portion into a round, press the rounds lightly to make flat kebabs. • Deep-fry the kebabs in hot oil till they are golden brown in colour from both the sides. • Drain on absorbent paper. • Serve hot with green chutney.

A popular dish is Bruschetta with tomatoes; the most popular recipe outside Italy[citation needed] involves basil, fresh tomato, garlic, and onion or mozzarella. Bruschetta is usually served as a snack or appetizer. In some countries, a topping of chopped tomato, olive oil and herbs are marketed under the bruschetta name. Master Chef Sanjeev Kapoor Explaining the cooking method of Bruschetta Ingredients : • Baby tomatoes halved - 15-20 • Baguette • Extra virgin olive oil - 6 tablespoons • Garlic,chopped - 10 cloves • Salt to taste • Jalapeno - 2 • Black olives - 6-7 • Mozzarella cheese grated - 4 tablespoons • Basil leaves - a few Method : Preheat oven to 200 °C / 400 °F. Heat olive oil in a non-stick pan. Add garlic and sauté on high heat until lightly browned. Add cherry tomatoes, salt and stir. Cover and cook. Cut the baguette diagonally into thick slices. Thinly slice jalapeños and add the tomatoes and cover the pan again. Halve the black olives and add. Mix well and cover and cook till soft. Arrange the bread slices on a baking tray. Drizzle a little olive oil over them. Spread the tomato mixture on one end of the slices and mozzarella cheese on the other end. Place basil leaves over the cheese. Drizzle some more olive oil over the slices. Keep the tray in the preheated oven and bake for 8-10 minutes or till the cheese melts. Serve hot

Master Chef Sanjeev Kapoor Explains the cooking method of Salsa Fresca Ingredients : • Tomatoes - 4 medium • Onion ,finely chopped - 1 medium • Jalapenos ,finely chopped - 2 • Olive oil - 2 teaspoons • Vinegar - 1 teaspoon • Lemon juice - 1/2 tablespoon • Fresh coriander leaves,chopped - 1/4 cup • Salt - 1/2 teaspoon • Dried oregano - 1/2 teaspoon Method : Remove the eyes of the tomatoes, make a cross slit on the bottom side and immerse in boiling water for half a minute. Drain the tomatoes, peel, deseed and chop them roughly. In a medium bowl, combine tomatoes, onion and jalapeno peppers. Add the olive oil, vinegar, lemon juice and salt. Crush the oregano and add. Mix well and let the sauce stand for at least two hours to blend the flavors. Stir in coriander leaves. Serve at room temperature with your choice of snacks or as a dip for your cocktails.

Ingredients : • Ripe mangoes,cubed - 2 medium • Rice - 4 tablespoons • Milk - 1 litre • Sugar - 3/4 cup • Pistachios,blanched and sliced - 8, 10 • Almonds,blanched and sliced - 6,8 Method : Soak rice in two cups of water for half an hour. Drain and grind to a coarse paste. Dilute rice paste with half a cup of water. Heat milk and bring it to a boil. Gradually stir in the rice paste, reduce heat and simmer for three to four minutes, stirring continuously or until the milk thickens well. Add sugar, and continue to simmer till sugar dissolves and is incorporated well. Remove from heat, cool to room temperature and stir in mango cubes keeping a few aside for garnishing. Pour this mixture into individual earthenware or ceramic bowls, garnish with sliced pistachios, almonds and mango cubes and serve chilled.

The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit. Master Chef Sanjeev Kapoor Explains the cooking method of Dal Pakhtooni. Ingredients • Whole black gram (sabut urad),soaked overnight - 1 cup • Ginger,peeled/paste - 2 inch piece/ 1 table spoon • Garlic,peeled/paste 15-20 cloves / 1 table spoon • Red chilli powder - 1 tablespoon • Butter - 100 grams • Tomato puree 1 1/2 cups • Garam masala powder - 2 teaspoon • Fresh cream 1 cup • Roasted cumin seed (Jeera) powder - 1 tablespoon • Salt - to taste For the granish Fresh Cream - 1 table spoon Fresh coriander Leaves - a few Method Soak sabut urad in four cups of water for eight to ten hours or overnight. Grind ginger and garlic to a fine paste separately. Cook urad in four to five cups of water along with salt, red chilli powder and ginger paste. Bring it to a boil. Reduce heat and simmer for about an hour or till it is completely cooked and tender. Melt half the butter in a thick bottomed pan and add garlic paste dissolved in half a cup of water. Cook for two minutes, stirring constinuously. Add tomato puree, remaining butter, garam masala powder and cooked urad to this and cook on low heat for an hour. Stir occasionally. Add water if required. Add fresh cream, correct seasoning and simmer for another ten minutes. The consistency of this dal is quite thick. Serve hot with bread of your choice. Grind browned onions with ¼ cup water to a fine paste. Add bay leaf, cinnamon, green cardamoms, cloves and cumin seeds to the pan and sauté until fragrant. Add ginger-garlic-green chilli paste and browned onion paste and mix well. Swirl ½ cup water in a jar in which browned onions were ground and add. Add paneer, coriander powder, cumin powder and garam masala powder and mix well.Add yogurt and mix well. Add coriander leaves, mint leaves and salt and mix. Add black peppercorns and mix well. Cook on low heat for 10-12 minutes. Serve hot.

Heat oil in a non-stick pan, add spring onions, celery, garlic, ginger, salt, and toss. Add green chillies, crushed black peppercorns and mix. Blend the cornflour in a quarter cup of water and add. Mix and add lemon juice. Mix again. Add the grilled tofu and toss gently. Serve hot

A carrot and coriander combination together makes the soup delicious. Ingredients : • Carrots,chopped - 650 grams • Fresh coriander leaves - 1 medium bunch • Butter - 2 tablespoons • Bay leaves - 2 • Black peppercorns - 1 teaspoon • Onion ,chopped - 1 medium • Garlic,chopped - 6-8 cloves • White pepper powder - 1/2 teaspoon • Salt to taste Method : Chop fresh coriander leaves finely and reserve the stems. Heat butter in a deep pan, add bay leaves, black peppercorns, onion, garlic and sauté for two minutes. Add carrots, coriander stems and five cups of water and bring to a boil. When the carrots are completely cooked, remove them and put in a blender to make a fine puree. Boil and reduce the stock slightly and strain. Take the puree in a deep pan and add strained stock to reach the desired consistency. Bring to a boil again. Add white pepper powder dissolved in a little water. Add salt to taste. Stir in finely chopped fresh coriander leaves. Serve piping hot.

ढोकला खाने में बड़ा ही स्वादिष्ट होता हैं, इसे भाप में पकाने के कारण तेल तो बहुत ही कम प्रयोग होता है. यदि आप तेल से बनी चीजों से परेहज करते हों तो इसे अवश्य बनाईये. Master Chef Tarla Dalal Explains the easiest way of cooking Khaman Dhokla ( Gujarati Recipe). Ingredients: 1 cup besan (bengal gram flour) 1 1/2 tbsp semolina (rava) 4 tsp sugar 1 tsp ginger-green chilli paste 1/2 tsp citric acid (nimbu ka phool) or 1 tsp lemon juice salt to taste 2 tsp fruit salt 3 1/2 tsp oil for greasing and cooking 1 tsp mustard seeds ( rai / sarson) 1 tsp sesame seeds (til) 1 tsp chopped green chillies a pinch of asafoetida (hing) 2 to 3 curry leaves (kadi patta) For The Garnish: 2 tbsp chopped coriander (dhania) Method : 1. Combine the besan, semolina, sugar, ginger-green chilli paste, citric acid and salt along with little water (approximately ¾ cup) in a bowl and mix well with the help of your hand to get a smooth and thick batter. 2. Divide the batter into 2 equal portions and keep aside. 3. Add 1 tsp of fruit salt to a portion of the batter and mix gently. 4. Pour the batter immediately into a greased 125 mm. (5") diameter thali and spread evenly by rotating the thali clockwise. 5. Steam in a steamer for 12 to 15 minutes or till the dhoklas are cooked. Keep aside. 6. Repeat the steps 3 to 5 to make one more thali of dhoklas. 7. Heat 3 tsp of oil in a small pan and add the mustard seeds. 8. When the seeds crackle, add the sesame seeds. Green chillies, asafoetida and curry leaves, mix well and sauté on a medium flame for a few seconds. 9. Remove from the flame and add 1½ tbsp of water and mix well. 10. Pour this tempering over the dhoklas. 11. Cool slightly and cut into equal sized pieces. 12. Serve hot garnished with coriander.

Master Chef Sanjeev Kapoor Explains the cooking method of Pot Mushroom Rice. Ingredients : • Oyster mushrooms - 3-4 • Fresh button mushrooms,sliced - 10-12 • Rice,soaked 1 cup • Star anise - 1 • Cornflour/ corn starch - 2 tablespoons • Oil - 4 tablespoons • Spring onions,chopped - 2 • Garlic,chopped - 2-3 cloves • Ginger,grated - 1 inch piece • Soy sauce - 2 tablespoons • Vegetable stock - 2 cups • Salt - to taste • White pepper powder - 1/2 teaspoon • MSG -1/4 teaspoon • Spring onions with greens,chopped - 2 Method : Boil the rice in three cups of water with the star anise until just cooked. Drain well, transfer to a clay pot and keep warm. Soak the oyster mushrooms in hot water for fifteen minutes, drain and chop roughly. Mix the cornflour and half a cup of water. Set aside. Preheat the oven to 200ºC/400ºF. Heat the oil in a wok; add the spring onions, garlic and ginger and stir-fry for half a minute. Add the oyster mushrooms, soy sauce, button mushrooms, vegetable stock, salt white pepper powder, MSG and mix well and bring the mixture to a boil. Add the cornflour mixture to the mushrooms. Cook for a minute or until the sauce thickens, stirring continuously. Pour the sauce over the rice, add the spring onions, cover with a lid and cook in the preheated oven for twelve to fifteen minutes. Uncover the pot, stir the contents well, garnish with the spring onion greens and serve hot. Nutrition Info Calories : 1379 Carbohydrates : 164.8 Protein : 22.6 Fat : 63.9

Ingredients: • Baby potatoes,boiled and peeled - 32-34 • Onion - 1 medium • Red capsicum - 1 medium • Yellow capsicum - 1 medium • Green capsicum - 1 medium • Extra virgin olive oil - 2 tablespoons • Salt to taste • Red chilli powder - 1 teaspoon • Black pepper powder - 1/2 teaspoon • Crushed black peppercorns - 1/2 teaspoon • Chaat masala - 1 teaspoon • Lemon juice - 1 tablespoon • Tomato ketchup - 2 tablespoons • Tamarind pulp - 1/2 tablespoon Method: Cut onion into big pieces and separate the layers. Chop red, green and yellow capsicums into small cubes. Heat extra virgin olive oil in a non stick pan, add baby potatoes, salt, red chilli powder, black pepper powder, crushed black peppercorns and chaat masala and mix. Sauté for 2 minutes and transfer into a bowl and let them cool. Add onion, all the capsicums, lemon juice, tomato ketchup, tamarind pulp and mix well. Transfer into a serving platter and serve. If you want you can garnish with fresh coriander or mint leaves.
